Cilantro Lime Chicken Kabobs
What you need:
For the marinade:
1/2 cup freshly chopped cilantro
1/2 cup of olive oil
2 cloves of garlic
1 Tbsp of red pepper flakes
zest & juice of 2-3 limes
salt and pepper
For the skewers:
2-3 large chicken breasts
2 bell peppers (any color)
fresh pineapple, cut into cubes
*add any other veggies you'd like--there are no rules when it comes to kabobs!
What to do:
Combine the marinade ingredients and marinate chicken breasts for 4 hours to overnight. To prepare skewers, cut chicken breast, bell peppers, pineapple, and onion into bite size bits, and alternate them on a wooden skewer. Grill over Premier Outdoors' Hardwood Lump Charcoal until chicken is cooked thoroughly. Garnish with fresh cilantro and lime juice. Serve alongside some homemade Spanish rice or just enjoy by itself!
